I have a drum front D44 in my EB and want disc. Can I just take the knuckles out off and swap a disc knuckle out from a F100 or another EB with disc?

Yes but you will have to adapt the tie rods as disc knuckles have a different size rod ends depending on what ones you get. BC broncos and a few other venders sell bushings to adapt the tierods or you'll need a conversion tierod either the venders sell them or convert your donor tierod. If you had or find a EB front axle with discs it would probably be easier just to swap the whole axle.
The ch#vy conversion is a little easier and will probably cost less.
I've done the ford conversion but my next conversion will be the ch#vy disc.
Check the links section there are a few writeups outlining both conversions.

go knuckles out from a 78-79 bronco or 76-79 f-150 with a 44 up front. It's a bolt on except for the tie-rod adapters.
