I have done mustang EFI and a 96 explorer efi swap with the E2000 pump.
Both those systems run 40 psi.

The 99-01 return less runs 60 psi.

Can the e2000 be used or do I need a better pump?

Airtex E8228 is a universal application and uses barbed ends, instead of the Ford Quick-loc like the E2000 pump. Both pumps have a max pressure of 120 psi. The fuel pressure regulator is what’ll keep it at 60 psi.
This one is much easier to plumb correctly.

Thanks, I had just put 5/16" hose in the e2000 I believe in the past.

Buy an aero tank for the explorer pump, run one run line to the fuel rail and your done. All the return will take place at the tank. I used the push lock rubber Efi hose.

I use the good marine hose with the ethanol barrier liner on the inside wall and have never had a problem.
