Body Work Using Replacement Panels

I currently in the process of a frame off restoration, and I originally planned on doing everything myself, with the help on a more mechanically inclined friend. I still plan on doing everything that I can, however, I recently decided to let a local body shop replace panels on the body (worried that I was out of my league on the welding and alignment).

Being a newbie, do any of you have any advise on what to look for in the quality of their work---common mistakes you have seen made? Are there certain measurements that I can use to double check behind them? The shop has a great reputation, however, they really aren't a restoration shop, which causes some concern.
