Clearcoat on dash?

I assume most people put a clear on their dash after paint but wondering if anyone has left it without a clear? My rational is it's easier to touch up without a clear but ¯\_(ツ)_/¯

Any advice on which way to go?

In my opinion, what you just said. It is amazing how easy it is to scratch the instrument panel surface and being able to touch it up is a big plus.

PPG Concept paint is single stage. It is what I use. I'll shoot clear over panels where there is 2 tone.

I used paint protection film around my ignition switch to prevent key scratches after I painted my dash with single stage paint.

I made the mistake of putting clear on my dash with the " more is better" theme,BIG mistake. Now it's peeling off everywhere. Now I really have a mess on my hands. I really don't want to remove the dash and start over, so I guess its time to get the putty knife and razor blades ready, ugh.

After 4 Bronco's since 1977, I can say I have never scratched a dash, and can't imagine doing it. But being a semi-neat freak, the usual potential for scratches would be keys swinging in the ignition, which is why I only used the single ignition key when in use. I could imagine certain Bronco's being used in more fun environments getting scratched, but the rest of the rig would likely match.

When people want to touch a surface, I use the statement regarding exterior car paint and interior house paint on the walls, "If you don't touch it (F it up,) then I don't have to fix it.;D

I have base/clear on mine, but only because my buddy (retired body shop owner) said that would be fine. Added a key guard just in case.
