long term restore project

I've started to restore an uncut 66 U15. What do you do when you know the project is going to take a year or so. My plan is to sand down a quarter at a time. How do I protect the exposed metal as I move onto the next quarter panel(the time frame in between may be a month or so)?

Epoxy prime is the only sure way to keep from rusting.
