5.0 HO out of 89 Mustang donor vehicle - rebuild advice desired

I purchased a complete 89 Mustang and will be using the 5.0 HO as a donor. My rig has a C4 auto, 488s and 35" tires. I run about 2800 RPM at 60 MPH. I will most likely hire a local shop to rebuild the motor and am looking for input from people who have rebuilt a 5.0 HO for lower RPM use. I am interested in about 300-350 HP I believe with power from 0-4500 RPM or so.

Any input on motor design as to compression, stroker, etc., would be appreciated.
