Aux switch panel wiring question

I'm thinking about adding a panel of toggle switches with an additional indicator light for each switch. Can all grounds from the lights be wired into a rheostat and then ground that so the indicator lights could be dimmed together?

Yes if they're incandescent bulbs.

Sorta if they're LED's. LED's have to be connected through a constant resistor, because they can't regulate their own current and will just pop if connected directly to power and ground (which would likely be the case for full brightness on the rheostat). So, if they're LED's ,you'd want to connect all the grounds to a resistor, then to your rheostat, then to ground. If the rheostat has a non-zero minimum resistance, then it takes care of this already.

...and not all LEDs can be dimmed. Depending on exactly what you buy, they may have a non-linear light-output response to falling voltage; or they may go from full-bright to OFF in a smaller change than your rheostat can be adjusted.

But the basic answer to your original question is still: yes. This diagram might answer some more questions for you:
