Long story short:

My wife and I have a 2 month old.

Our EB restoration is nearing completion and we're wondering about car seats. Anyone else out there carry a newborn/toddler? Same as any other car?

We put in a 6pt roll cage already

I had a CJ5 until my kids were about 10 and 12. We just belted the car seats into the back seat (or occasionally the front passenger seat after they were a little older) like normal. Although the poor access to the back seat of these bobtails does make it a bit of a pain to do.

Are you going to run a stock rear seat or pulling one with latches for the car seats from a donor vehicle?

My plans (two under 4) was to find a rear bench with the DOT latches rather than go with the stock rear seat.

I should point out that my car seat experience is almost 20 years old now. Back then there was nothing but seatbelts used to secure child seats. So my putting car seats in the back of my CJ5 was using the Jeep seat belts to secure them. I have no experience with newer car seats.

Two car seats in back of mine, both forward facing. I use new lap belts brought the seats and then I have a top tether to the bolt on the back of the seat (though not sure the top tether does anything but does give one extra point.... could run that to corner bolt of rear roll bar if you have one). With your age you would just reverse the seat so it is rear facing.

I do not see any reason why you could not replace the seat belt anchor bolts with an attachment that works with Latch type anchors. I have not found any bolt anchors that work so do let me know if you find one. But as others have said...the car seats are made to work with standard lap belts.

I'll have to see if I can find a picture of my daughter's car set in the back of mine.

Been hauling my little one around since she was 1 or so. She's 5 now. Her favorite place is riding in the front but she's usually ok sitting in the back also. I use the factory seatbelts to hold her seat in although the rears have gotten stiff and difficult to adjust over the years.

We're going to run the Rubicon in August and I'm going to bring our ARB cooler so I'm struggling with how to mount her seat since there won't be any room for the factory rear bench. Hmm...
