DIY paint job preparation

My question is for paint prep whether to completely strip to metal or just sand smooth the existing paint ? The Bronco is a daily driver so it doesn’t have to be Pebble Beach quality. I’m fixing a few dents all over and it likely has one repaint by PO, but it’s not the factory color so it’s not easy to match, I figure it’s easier to do an entire respray. The paint is in good shape, no peeling etc. so it will be down to metal here and there, for the remaining existing paint is it ok to just sand with 320 or should it all be removed?

use an epoxy primer all over the old coat, before spraying the new coat of paint.
