Plug the oil drain back holes in the head castings with rag or paper towel. You do not want any of the debris getting into the block passages and oil pan. A friend lost his engine when the trash blocked the screen in the pickup tube.
My arsenal includes gasket scraper, razor blade, 7 in 1 tool. Stainless wire, nylon, & brass toothbrushes. Solvents (paint thinner, acetone, laquer thinner. All tested, but never mixed). Patience for a solvent to soak in. Depending on the make up of the original gasket sealer different stuff works on different projects.

What a nightmare. Who would just put the new gasket on top of an old gasket.? I guess they assumed the old gasket was so stuck on the head that they are now a good new sealing surface for the new gaskets.
