How Carb Guys See Fuel Injection

So I have a Fitech EFI that has never run properly for very long. Now the idle and IAC steps jump all over the place, turn it off, then it wont start up. First, anyone have ay ideas to fix? Second, anyone ever go back to my Holly 4 carb? If so, what are the steps and things to consider? I have a Sherman tank with electric pump, so assume I need a fuel pressure regulator and gauge, re-run the return line from the regulator instead of TB, but what else? The old carb was in good condition, so hoping it just straps back on......Any help is appreciated.

In the end I have the roller engine, serpentine, and a carb. I'm happy with it!
I'm a carb guy too.
I made my wideband air/fuel meter portable so it can be used on anything I've got. I have to put an exhaust bung onto anything I test, but it makes tuning a carb so much quicker and easier.

I love the simplicity of my Autolite 2100. I could rebuild it on the tailgate on the side of the road if necessary. EFI is Greek to me.

I am near clueless when it comes to FI but he sniper install was about as easy as I could hope for. Read and followed the instructions, turned the key and it fired right up and ran fine. I think they are becoming easier but if it was not plug and play, I would be lost.

Many owners just don't bother to tune a carb properly. Then they're unhappy with it.
I recently tuned mine with a wideband air/fuel meter and a vacuum gauge.
Here's my rolling test lab.

I'd like to try wideband. Hey blu, I see you run dual exhaust, as do I. Does it matter what side the O2 sensor goes on? Just pick a side?

It works just like the oxygen sensor on one of the throttle body injection systems. Just one side is used.
I wanted to put the sensor on the "H" pipe, but it's too far back from the engine.
