mustang 302 roller motor carb recommendation

1996 mustang 302 DUI ignition and currently has the quadrajet from BC Broncos and just have never been happy. I admit i'm not a carbuerater man and according to my mechanic he suggests scrapping it. Trouble cold starting, Choke, and loading up problems. Street vehicle 95% of the time.
Need new carb suggestions please . One guy told me to go with a Holley 500cfm?

I had the Holley 500cfm two barrel and wasn't happy with it. Something like a 600cfm four barrel actually has smaller primaries. I've had good luck with my Edelbrock 600cfm. (mine is a non roller motor)
