If it were me, I'd go with the 15x8s especially since you're going to run 31" tires. But it's personal preference really. There are several threads that have discussed this subject in the past and if you do a search, you'll find plenty of opinions on the pros and cons of each size. I'm sure you'll even find a few threads with pictures of each.

The 15x8 will work perfect. If you like the wider deep dish look the 15x10s would work but would be better with a 33x12.50 tire though.

Either will most likely work as long as your tires will mount on them ok and the backspacing is around 3.75". Deeper backspacing creates limitations on turning and can result in the wheels hitting the steering components.

my opinion, but 12.50s look like beach balls on 10 in wide wheels, like the ones on my truck :( i could only imagine a 10.50 on a 10 in wheel

I have 31x10.5 's on 10" rims and they are streched way to far. When I bought the rins I thought I would have the money for tires. I thought wrong. Get 8".

Narrower will look and drive better. Unless your wide wheels have a lot of positive offset, they will scuff and wear durring tight turns. That's the annoying squeel you hear with most deep rims.

I don't care for my 33/12.5's on the 10" rims I have. The tread is narrower than the rim .
The width measurement is typically for the cross sectional area of the tire where it "bellys" out on both sides , not for the tread.
Just learned that not too long ago.
Theres no way I'd put 10.5" tire on a 10" rim.
My $.02 worth
