What kind of camshafts are you guys running and which ones would you recommend? I'm kind of stumped with this part on my 351W rebuild. I want lots of torque in the 800-4300 rpm range. Also decent gas mileage. Any suggestions?

I run the cam specs from the Edelbrock Power Package. This would be a slightly higher rpm cam than what you want but I used Rhoades Lifters to reduce lift and duration at low rpm to increase low end torque. Seems great. One day I'll get the Edelbrock heads to go with it.

I agree, the Edelbrock Performer Power Package would be a great option for what you want.
