Will one of these work for headlights, wipers, hazards etc?
I was thinking of using a rocker switch that is a 3 way switch.

A switch is a switch. May want to run relays depending on amp limits of the switch.

so very true.

Expect to need a few extra parts; diodes, relays, etc.
If you know what you are doing a single pole switch and a handful of diodes makes an easy hazard switch. Not knowing what you are doing will cause all kinds of wierd backfeeding problems.
