GM or Ford calipers? Part numbers?

AFAIK, Dorman doesn't offer remanufactured calipers, only new. Napa only offers remanufactured options for the Ford calipers, so you must be talking about the GM D52 units? I haven't personally seen new Ford caliper options anywhere, but I haven't needed them recently either, so I haven't really looked.

As for issues, I've had pretty good luck with both Dorman (GM new) and Napa (Ford reman) calipers with the steel piston upgrade (away from phenolic).

I have been trying to get a firmer pedal on my hydroboost of a mustang cobra set. It worked great for a while until I had to replace the brake hoses and the calipers. I have bled the lines but I am unable to get a firm pedal. I just installed a front disc conversion on my daughter's bronco using a 79 f150 set-up along with an 8" booster and work better than my HB. I think one of my calipers is not working properly.

These are for the stock 76-77 calipers.

I rebuilt my '77 F150 front brakes with the Napa "premium" units and they seem to be working fine...I had an old caliper with phenolic pistons seize up on me and strand me on the side of the road, so I grabbed what was close and available, which happened to be from Napa. They had the premium units on hand, so that's what I took for ~$37 each IIRC, though I would have payed whatever they cost. Fit and finish seemed better than average for a remanufactured caliper FWIW.
