Hello. I’m starting to rebuild my original 1967 Bronco sport.
Should I go with the 5.0 coyote engine or a 302? The coyote is obviously more expensive but would the 302 be a desirable engine for the restoration?
Any other suggestions ?

Coyote will require a lot more modification. 302 will fit perfectly.

Or you could do something in the middle of the road cost-wise, and go 351W stroker...393/408/418/427/429/460/etc. The 408 is a a super popular option and would probably be the route I'd go since you can do a somewhat budget-minded 408 stroker build without breaking the bank. Good power, torque, reliability and as close to bolt-in as you're going to get for a non-stock option engine.

You say "original", how original? Are you trying to keep original, or at least the feel of original?
Are you trying to build it for a flip? Or do you plan to keep it?
What transmission are you planning on running?
What's the overall package going to be?

I'm a fan of the 351-408W engines. With modern parts they run really good.

Can't go wrong either way, but the 302 is going to be a lot less work. If you're looking at resale then the Coyote could help gain more interest and a higher price tag, but if you aren't looking to resell it you really need to build it the way you want it. Consider how you will use the Bronco and go from there.
