Finally got to pull the valve cover. Look at this! Turns out you boys were right all along- Bromco script valve cover baffle rubbed and totally broke free. Engine started running like hell when it did, too. Pulled it out and she runs like a top again. Stoked! But it does leave me wondering why vendors sell these valve covers for 351w when they rub the rocker arms? Seems goofy. Just feel lucky I didn't bend a valve or anything.

Good news!
But you're not the first to fall prey to vanity.
A lot of the accessories may be cool but not well thought out.

Guess so! Man, I am so relieved. Now I can start saving up for the fun things again.

Quick question - do you think I need to replace that baffle with anything? The breather cap has some substrate in it but I was thinking of getting something like a baffle grommet.

I have a set of aluminum valve covers that came with a cheesy metal shield for a baffle. It didn't keep the oil away from the PCV valve, and burned a bit of oil. I ended up using one of these oil filler extensions to get the PCV valve further away, and it solved the problem.
The extension actually helps when doing an oil change too.
The extension I used was the twist on one, but the grommet type is also available.
