I think I'm pretty set on going with 16" wheels just gotta figure out the wheels size
16" tires may be hard to find
In the 16 inch M/T Classic III your choices are 16x8 16x10 or 16x12, since you want a narrower tire that pretty much leaves you with 16x8

How wide is the tire you want to use?
You don't want the wheel to be wider than the tire.
It's better if it is not more than about 80% of the tire width.
You can often find the tire dimensions in inches for metric tires on the company's website, at least ones that sell in the US.
I just went through this. I had a nice set of 16" wheels. I wanted 165-75-16 tires. There are plenty out there, however, they all had "E" load ratings. Heavy ten ply tires are hard to justify on a Bronco. The added centrifugal weight is really noticeable when you drive with them and they didn't go with my Bronco's weight loss program. They did handle and drive well when up to speed though.
I ended up just going back to 15" rims.
