Plan to re-stab the distributor at 10° as recommended. Any suggestions on plug wires? Brand/size? Also what should the spark plug gap be? Thanks!

While I agree with trying to start as near to 10 or so as you can, don't re-stab the distributor to get there unless you have to. Simply turn the distributor clockwise that same number of degrees and you're there.
And like was said, pop the cap and see which way the rotor is pointing to find your number one starting point.

Any suggestions on plug wires? Brand/size?

Lots of people recommend Ford Racing wires. Seem like a lot of bang-for-the-buck. But Prestolite, Pertronix, and several other brands would work very well.
I personally prefer the ones you cut and put one end on yourself. That way you can route the wires exactly the way you want them. But if you don't want the extra work at this point, a set that's already made up with both ends is your quickest and easiest way.

Also what should the spark plug gap be?

What coil? What intake? What cam?
Every engine likes something a little different, but it's probably best to start with just above stock (say .035-.038" or so?) and then go from there. Mine was always happiest at .042", but I know others that didn't like anything over .040".

That firing order is correct for a roller. #1 plug wire needs to go where the rotor tip is pointing when at TDC.....but actually I agree with the previous advice about actually setting at 10 BTDC. That's about where you want initial timing anyhow. It may be a bit hard to start if you really are dead on TDC.

Be sure to arrange wires counterclockwise.

Roller cammed 302's can have either firing order. Depends on what the application was.

The intake is an edelbrock performer, coil is the summit house brand that was recommended with the distributor and the cam is whatever would come stock with the 91 5.0 H.O.

You did get the right dizzy gear for the roller cam in that '91 Mustang engine right?
I "think" you said that was a Mustang engine.......
If you ordered it from Summit for"that" engine it is probably fine.
If it is not it is easy to change dizzy gears. Just pop out a pin that holds it on and pop the new one on.

There's some measuring needs to be done in doing this, it's not as simple as you're saying.
