I am told and have read that Bowfin are like some other fish.....They have a jiggly fleshy meat. I read that it was suggested to cut it into cubes and deep fry it. If cooked hot enough it apparently stiffens up and tastes good. But I don't know.....think I'll stick with Bass, Catfish, Specs, etc.....

Never tried Bowfin, but I learned to love gar after my time in LA, it's a good white fish just a PITA to clean. Sucks I threw away so many of them as a kid cause all the FL crackers said they where junk. They used to say the same thing about Snook, they called them soap fish cause if you cook them with the skin on they get a soapy taste and crackers never used to filet fish.
