There are a few more factors that affect MPG other than what engine, carb, trans, gearing and tire size, we all run. Yes those are some of the main factors but camshaft is one of the all important things as well. maybe even more important that some of the others as it should be matched to your overall combonation.
mileage on my 73 is 15-17 at 65mph depending on wind direction. 13-14 at 75mph. rest of the specs are below. havent tried to figure out what my 71 gets yet.

To place it in perspective, I dropped dime on a 2012 Jeep unlimited with the new motor as a chase "wife" truck, thought I'd get close to the 20 sticker MPG, I get 14mpg, 2 less than my 170 6 cyl. 46 years of technology and it gets worse MPG. Does drive nice though.

I'll play along..

stock '68 289 with Performer and Holley 600
stock C4
3:70 gears
stock height and weight

When I had the 3 spd on tree it was close to 13 mpg. With the C4 it is closer to 11 than 12. Pretty good state of tune but I think I can get a little better mpg.

Before i pulled my tired 302 out with pertronix and a holley 600 4bbli was getting 7mpg period... Thats with 3.50 gears and 33" tires all stock suspension. Ill let ya know in a couple months when its running again what the new figures are.

Abysmal MPG, probably GPM actually. It's started, driven to the hay barn, the trailer is loaded, driven out to the field, bales spread out and cut, driven back and shut off. Probably 45mins of run time a day every day all fall and winter.

engine = 68' 302 (bored .60 over - 310ci), edelbrock intake, long tube headers, electronic ignition, recurved dizzy.
carb = Holley 1850 (600cfm 4bl), 1" spacer, low profile cleaner.
trans = 3spd RAT (to be replaced with NV3500)
axle ratio = 4:10
tires = 33x12.5

No idea on MPG as my odometer doesn't work and therefore my rig doesn't age! :)

carb = what's a carb? 19 lb injectors, A9P ECM
trans = C4, 5 direct clutches, rigid intermediate band, raybestos stage 1 clutches, case and pump mods
axle ratio = 4:10
tires = 33x12.5

MPG directly tied to throttle pressure. 13.5 in town average, a little better on the highway if I keep speeds below 70 mph.
