On my LS3 restoration I'm finding all kinds of new things that need replacing so mows the time.

Here's a few questions I need help on.

What is this? Should it be replaced? If so, with what?

It also looks like my wiring harness was redone. I was told it was done 8 yrs ago.

Here's both the fuse box and the steering wheel plug. Any idea what brand this might be? Is there a replacement fuse box for modern fuses?

I can hit a couple. First pic is voltage regulator, not needed with a 1 wire alternator, but it should be removed properly when the time comes to avoid issues.
Last one, evaporator. Don't NEED it, but you should keep it. It doesn't affect performance, and will keep fuel fumes down.
I don't have one in my 67, but my 74 still has all of it, and never any fuel smell in the 74.
I'll let others comment on your harness questions.

That voltage regulator in the first pic can be removed in its entirety, wiring and all. Your ecm should be controlling the new alternator, and if it’s not, an idiot light is all it will require to function properly.

“...an idiot light... function properly...”
if U now have the 3G (ford) no need. GM 1 wire (less disriable) looses this helpful function (idiot lght). Loosing a belt or other
minor catastrophy) will set the lght on so as to not run down a battery’n get stuck out there (has a diode in line).
Elgin is tops so I’d keep it (ina box on the shelf). ‘90s + alternators R “internally regulated”.
Modern (ATO style fuses) fuse boxes are available (pick a nice one, H2O proof, etc) oem harder to come by & usually used.
I dont no any plug Qs nor do I see it in the pic. What’s the Q there?
Evap canister’s by the driver’s hip (depending on yr) in the framing. I cant tell what the fella(s) did w/a cheb motor ina ford...

1st (as mentioned) voltage regulator for the externally regulated Ford alternator. No, you won't need this with the LS swap.
2nd post, first photo, looks like headlight switch.

may B he just curled up wires there rather than addressing the whole system.
Left them incase any 1 wanted to bring it back to oem. Nota bad idea, I’d just
'make a neater mess' if owning. U could use a Y/M/M schematic and address
it properly if wishing to dress up’n remove “that stuff”. Not sure your over all
plan, decision should come from that. How long have U owned, what’s been
done in that time?

I’m afraid your bronco was not as advertised.
That looks like 100% stock factory original wiring that you’ve shown pictures of so far. Yes, it’s all torn out and laying all over the place, and not where anything is supposed to be (except for the voltage regulator), but it looks all original from here.
