will my 302 headers fit in my eb if I go to a 351 win later down the road? I know they will bolt up fine but will they clear in the eb engine bay etc.

I ran my 302 headers for a short time after I swapped in my 351! I'm not sure what type they were, but yes it can work! If I remember correctly I did have a few issues with the headers clearing the starter so to avoid having to replace the starter I went ahead and invested in some WH headers made for the 351

Some will fit better than others. When I installed the 351, my 302 headers interfered with the clutch linkage, and the driver's side collector flange hit the frame. With advice from Tom, of Tom's Bronco Parts, I just bent the headers. I let the engine idle for a while to heat up the tubing, then used a 2x4 to pry the collector away from the frame. I gained about 1 1/2" clearance that way. It also helped with the clutch clearance, and with that I just bent the clutch bellcrank a little, and it's been fine.
