Go with the Saginaw dual return pump while you're at it. You will need a different bracket(wh) and possibly different hose ends or adapters. There's a Ford Lincoln pump that is Saginaw dual return but last time I needed one they were not available at napa do to lack of cores. There is a chevy version that is a direct swap I think off a blazer. If you need a part number I can dig it up.

Yep. Junkyard Astro or Super Duty booster and use the master cylinder for a core on a new one. I pieced my system together for about 1/4 of the cost of a kit from the vendors.
I like the Mustang version. Regular GT version, don't need to pay the cobra tax. It's clocked 90° and clears the engine better I feel. The 15/16" master has a real good feel to it as well. That was with just the typical GM disk and stock drums. The only special thing I did was a set of Wilwood pads, a step above what you find in the local parts store.

That’s fine for stock sized brakes. I have big dual piston calipers on my Dana 60, so the 1.25” bore works great. It worked well with T-bird calipers on my old Dana 44 too. I also clocked mine 90 degrees when I did the coilover conversion.

With your big calipers, that would be a good choice.

This might be a dumb question but doesn’t that style of PS pump have its own reservoir already a part of the unit. Is that just for extra fluid?
The pump I’m running doesn’t have the big integrated reservoir. But yes, the remote reservoir allows for extra fluid volume to keep the temps down. It also has a filter built into it.

I added a bc ps cooler on mine. They also sell one with 2 inlets for if you have a single return pump.
