What about your vacuum advance? Is it attached to the ported-spark fitting, rather than full manifold vacuum? I've seen engines that would stall under light acceleration when plumbed like this.
And if not, what is the state of tune of the engine? Been awhile since a tune up or carb rebuild? Or is it relatively fresh?
A weak spark can do it too. Are you running points still, or electronic? Since it's a '75, presumably it's got a Duraspark setup? Fading magnetic pickup in the distributor maybe? You can easily test it with an ohm-meter, but I forget the specs you're looking for. Within a certain range though, they're still good. Outside of that range and it should be replaced. Even if it's not the root your problem.
