I'm looking to get new pipes routed and mated to new dual mufflers then out both sides. What should I expect to pay for a shop to do this (I already have the mufflers)? Thanks!

I was quoted 175.00 out the sides, and 200.00 out the back. This is using 2" tubing on both applications.

Those sound about right. $200-250 is a good ballpark. Crimp bend and aluminized tubing.
Some people will still get deals for as low as $100 and other places could run you nearly $400 for the exact same thing.
Stainless and/or mandral bends will add (sometimes considerably) to the price.

I paid $147 at a local Midas to have it ran out the sides in front of the rear tires. Behind the tires would have been closer to $200. I also had the mufflers already.

$200 here as well. From the headers all the way to the rear. Great work and a reasonable price. Anyone in the Stockton area need exhaust work? I'll give Muffler Man a glowing recommendation.
