Front end on a 44 with Disc's..

As of right now using the scientific paint stick and tape measure set up... I have a 1/8 inch toe in as it sits. Does that sound about right, or should it be more, less... etc...

Yes, a good start. Spec is between 1/8 and 1/4 and often a 3/16" toe setting right in the middle works best.

But for actual toe-in measurements (ignoring toe-in "angle" for the moment) your sticks need to be as long as your tires are tall. So if you're running a 33" tire that measures out at 31.5" in diameter, you'd want 15.75" of stick poking out from the center on each side.
And if you're planning to use wheels with a large offset, mounting the sticks to the disc faces may not give the most precise to the tire measurement either. However it's close enough to get you started safely.

And even though it imparts only a minor discrepancy, making sure that your suspension is at ride height is just a little bit more accurate due to the front end tilting on the radius arms.

What size tires and wheels are you planning?

Yeah don't do 1/4 at that short of length using paint stick, wow talk about some straight line stability.

Took another scientific shot at it.

Using 17 1/2 inches out either side centered on the hub, and going off the front plate of the hub, I got 59 1/2 front, 60 1/4ish rear. It's been a few decades since I did basic math for fun... but I read that as a 3/4 total difference, 3/8 each half.. So it's roughly set at 3/8 toe in.

I mirrored the old tie rod which had a nice up curve in it from hitting a few rocks, and I was running 31's before. So it looks like I need to spread that tie rod about 3/16 ish until I can get a good feel for it on the road. Sound about right?

I've never calculated it per wheel. It's always been a total measurement directly. So your 3/4" reading is your toe-in. Not a component of it.
I've heard it done your way (but only read it here on classic) but to me you have 3/4" toe-in as it stands now.
I adjust them so that the front total measurement is 1/8 to 1/4 inch front to back. Somewhat closer to 60" rear and 59 3/4 front.

I'm not an alignment expert, but that's how I've always done it and it worked great. if I've been wrong, then I've been lucky too!
