Good luck. If you weren't raised on a carb then this is a learning experience. Most of us old timers this "starting ritual" you're going thru is like walking from the bedroom to the bathroom in the middle of the night- don't even think about it, don't have to open your eyes it's just a learned, memorized routine. lol
If it starts and runs till you start to let out the clutch then you have answered a dozen questions already.
Do everything Paul said about checking the choke circuit for proper operation.
The one time you stated it started and ran till you let the clutch out... important- how long had it been idling since it started? 10 sec or 10 min?
Here's another tip. Never pump the accelerator pedal without cranking the engine over. Meaning this- when turning the key to start the engine THEN pump the accelerator AS THE ENGINE IS ROTATING in an attempt to start. If you pump the accelerator without the engine turning over the gas just squirts into the intake manifold and pools up directly below the carb waiting until you crank the engine to then try to atomize and move the gas which is not atomized to any open intake valve.
Keep it running, let it warm up, THEN see if it restarts easily and post up the next symptoms. I'll bet you have a combination of choke and accelerator pump issues.
